Recipe Ingredients for Easy Mini Spinach Omlets

4 large egg whites
2 large egg yolks
1/2 cup mozzarella cheese, skim
1 cup chopped fresh spinach
1 teaspoon canola oil

Recipe Directions for Easy Mini Spinach Omlets

  1. Preheat oven to 350 degrees. Using a napkin dipped in the oil, rub each section of a regular muffin pan to keep the eggs from sticking to pan.

  2. Beat the egg whites and yolks together.Then stir in spinach and cheese and divide evenly among muffin cups and bake for 10 minutes, or until tops are nicely browned and center is set.
