Recipe Ingredients for Easy Mini Fritattas

6 tbs egg substitute
1 1/2 tbs flour
2 tbs plain yogurt
4 oz turkey
1/2 cup cooked spinach (frozen or fresh, drained)
1/4 cup zucchini (diced)
1/2 tbs italian seasonings
1 salt and pepper to taste
1 biscuits
2 oz cheddar cheese
1 tsp hot sauce

Recipe Directions for Easy Mini Fritattas

  1. Open tube of biscuits and cut each one in half.

  2. Grease the bottoms of cupcake pan and press one biscuit half into each cup to cover the bottom. Bake per biscuit instructions.

  3. Turn oven down to 350 degrees. In a large bowl combine egg substitute, flour, yogurt, meat (diced), spinach, zucchini, italian seasonings, salt and pepper and Tabasco (if desired).

  4. Pour mixture over slightly cooled biscuits. Leave a little room for expansion in the cups.

  5. Top each cup with cheese.

  6. Bake for 20-25 minutes or until inserted knife comes out clean.
