This recipe is easy because all it requires is a flat grill and cheap, easy breakfast foods found in most American homes. I suggest using the preformed frozen hashbrown patties, as they make this recipe mush easier!

Recipe Ingredients for Easy Mexican Scramble

1 Frozen Potato Patties
1 large egg
1 large mushroom
1 tsp cilantro
1 tbsp chopped onion
1 tsp chopped green onion
1 clove garlic

Recipe Directions for Easy Mexican Scramble

  1. Prep: Finely chop your large mushroom (crimini or button mushrooms are ideal), along with your garlic, cilantro, and onion. Add a pinch of salt and fresh ground pepper and set aside. Beat egg until thoroughly scrambled and set aside.

  2. Grease your 325 degree F flat grill using your preferred fat. I used butter for its breakfasty flavor, but olive oil would work nicely, too.

  3. Place your frozen hashbrown patty on the flat grill and cook until each side is golden. Try to avoid flipping the patty too much, as it will tend to fall apart as it cooks.

  4. On the flat grill, beside the patty, add your previously chopped veggie mix and cook for about 5 minutes or until the onions are translucent.

  5. Add your scrambled egg ON TOP of the cooking veggies and incorporate the veggies into the egg. Continue cooking the egg/veggie mixture as you would a normal scrambled egg.

  6. Place hashbrown on a plate and add the vegetable scramble on top. Add salt and ground black pepper to taste and serve with hot sauce or spicy salsa! Enjoy.
