Poached or roasted breast, skin and bones removed. Shred with two forks place in medium bowl. Dice red peppers and onion add to bowl. Remove seeds and dice tomato, add to bowl. Halve jalapeno and chop (remove seeds. Add to bowl. Also add to bowl, green chiles, enchilada sauce, sour cream and mayonnaise. Stir together all ingredients until well blended. Slice tortillas into strips. Crush chips roughly.

10 tortilla medium (approx 6" dia) Tortillas, Ready-to-bake Or -fry, Corn
10 oz Old El Paso Sauce Enchilada Hot
0.5 cup, chopped Peppers, Sweet, Red
0.5 cup chopped Red Onion
2 tbs Mayonnaise Dressing With Extra Virgin Olive Oil
4 oz Sour Cream Regular
4 oz Mild Diced Green Chiles
0.5 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
10 oz OLE Queso Fresco
2 oz Tortilla Chips
1 pepper Peppers, Jalapeno
1 unit (yield from 1 lb ready-to-cook chicken) Chicken, Breast, Meat Only

Recipe Directions for Easy Mexican Chicken Casserole

  1. Preheat oven to 375

  2. Spray a casserole dish with cooking oil.

  3. Layer bottom with half the tortilla strips.

  4. Top with half the sauce.

  5. Sprinkle with half the cheese.

  6. Place a second layer of tortilla strips on top.

  7. Add remainder of sauce and then the rest of the cheese.

  8. Sprinkle with crushed chips.

  9. Place in oven for 30-40 minutes, until bubbly and chips are crispy.

  10. Remove from oven allow to rest 5 minutes. Serves 8
