Recipe Ingredients for Easy to Make Ratatouille

2 tbsp olive oil
1 cup chopped onions
3 tbsp minced garlic
2 small potatoes
1 medium eggplant
2 small zucchini
1 cup Vegetable Broth
1 cup mushrooms
2 tomatoes
2 tbsp tomato paste
3/4 cup frozen corn

Recipe Directions for Easy to Make Ratatouille

  1. In hot olive oil saute the garlic & onions. When almost clear, add the tomato paste and mix well. Add the rest of the vegetables and mix well so they will be covered with the sauce.

  2. Add spices (I love curry, paprika, salt) & fresh Italian Parsley.

  3. Let simmer for 1-2 hours.

  4. Enjoy
