Recipe Ingredients for Easy Mac n Cheese

8 oz whole wheat penne pasta, dry
1 tbs smart balance butter
2 tbs all-purpose flour
1/4 tsp salt
1/4 tsp ground mustard
1/8 tsp pepper
1 c fat-free milk
4 oz shredded reduced-fat cheddar cheese,
2 tbs red bell pepper, chopped
1 med green onion, sliced (1 tbs)

Recipe Directions for Easy Mac n Cheese

  1. Cook and drain pasta as directed on package. While pasta is cooking, melt butter in a 3 qt nonstick saucepan over low heat. Stir in flour, salt, mustard and pepper. Cook over low heat, stirring constantly, until butter is absorbed; remove from heat.

  2. Gradually stir milk into flour mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese until melted.

  3. Stir pasta, bell pepper and onion into sauce. Cook, stirring constantly, until hot.
