Easy salad for a light, healthy lunch.

Recipe Ingredients for Easy Lunch Salad

1 cup chicken
1 cup lettuce
1 cup fresh spinach
1/2 cup seedless grapes
1/2 cup cherry tomatoes
1/2 cup strawberries
1/2 cup cucumber
1/2 cup lowfat cottage cheese
1/2 cup slivered almonds

Recipe Directions for Easy Lunch Salad

  1. Can also be prepared with tuna, salmon, or meat of your choice (or without). Pre-cooked is easiest.

  2. Use choice of greens in place of lettuce and spinach.

  3. Cut grapes, tomatoes, strawberries, and cucumber to preferred salad size.

  4. Toss ingredients and serve immediately.

  5. This one doesn't keep very well so only make as much as you plan to eat at a sitting. Of course you can always prepare and store the individual ingredients for an even quicker salad.
