Easy banana walnut muffins w/half the sugar and half Splenda.

Recipe Ingredients for Easy, lower-sugar Banana Walnut Muffins

1 1/2 cups flour
3 bananas
2 eggs
4 tbsp butter
1 tsp vanilla extract
1/2 cup sugar
1/2 cup Splenda
1/2 cup walnuts

Recipe Directions for Easy, lower-sugar Banana Walnut Muffins

  1. Mix 3 very ripe mashed bananas and 1 tsp vanilla in bowl.

  2. In larger mixing bowl, cream butter, sugar and/or splenda, and eggs. (You may substitute one or the other but adjust your calories)

  3. Add bananas and vanilla to mix and beat until smooth.

  4. Add flour until blended, then stir in walnuts.

  5. Spoon into well-greased or lined muffin pan and cook at 325º F for 15-20min or until muffin tops are light golden brown.
