Looking for quick recipes that incorporate lentils for their high potassium content (move fat out of cells into blood to be used as fuel, balance bodies PH, balance sodium, lower BP), this fits the bill.

Recipe Ingredients for Easy Lentil Tacos

1 cup lentils (cooked - yield 2 cups)
1 1/2 oz taco seasoning (if using McCormick I add 5 oz tomato puree)
4 oz shredded cheese (taco style)
6 whole wheat tortillas
6 cups lettuce (shredded)
2 tomatoes (chopped)

Recipe Directions for Easy Lentil Tacos

  1. cook lentils

  2. add 2 cups cooked lentils (in place of meat) to taco seasoning, cook according to package directions (if using McCormick, add the tomato puree and cook till well thickened)

  3. divide among 12 warmed tortillas

  4. top with cheese, lettuce, tomato and fresh pico de gallo as desired
