Recipe Ingredients for Easy Lentil Soup

3 carrots, grated
4 stalks celery
1 onion, chopped
4 cloves garlic
1 tbsp dried marjoram
1 1/4 cup dried lentils
4 cups vegetable broth
28 oz canned roma tomatoes

Recipe Directions for Easy Lentil Soup

  1. Sauté carrots, celery, onion, and any spices until translucent.

  2. Add lentils, veggie broth, and tomatoes, and bring to a boil.

  3. Once boiling, turn down heat and let simmer for about one hour, or until lentils are tender.

  4. Optional: stir in 1/2 cup white wine, sour cream, or chopped green onions. Enjoy!
