This hearty soup can be made with fresh potatoes or with leftover mashed potatoes. Season with what ever spice, you love, and make this dish your own

Recipe Ingredients for Easy Left Over Potato Soup

4 cups mashed potatoes
1 onion, minced
2 slices black forest ham, cubed
3 tsp of margarine or butter
1 garlic clove, minced
1 cup chicken broth
1/3 cup milk, 2% or 1%
1 pinch of paprika
1 pinch red pepper flakes
1 salt and pepper to taste

Recipe Directions for Easy Left Over Potato Soup

In a medium soup pot melt butter over low heat, and saute onions (until tender), ham and garlic. Stir in the mashed potatoes, and then slowly add the chicken broth. Stirring, add milk (use more or less to achieve desired creaminess). Cook until heated through and season with salt, pepper, paprika and red pepper flakes.
