Easy Jambalaya. You can use a box of reduced sodium jambalaya mix for the rice as well.

Recipe Ingredients for Easy Jambalaya

1 tbsp olive oil
1/4 cup onion, chopped
1 cup green pepper, chopped
14 1/2 ounce diced tomatoes, undrained
1 cup water
1 cup long grain rice
1 (1 pound) shrimp, peeled and deveined
1 tsp parsley

Recipe Directions for Easy Jambalaya

  1. Heat oil in large skillet, saute onions and peppers until tender, about 7 minutes.

  2. Stir in tomatoes, water and rice, bring to a boil.

  3. Reduce heat, cover and cook 15 minutes.

  4. Stir in shrimp, cover and cook an additional 10 minutes until shrimp are pink and vegetables and rice are tender.

  5. Let stand 5 minutes before serving.
