Very easy quick chicken with an italian flair. Only took about 25 minutes.

Recipe Ingredients for Easy Italian Chicken

3/4 cup canned diced tomatoes
1 tbsp chopped onions spice
1 tsp cayenne pepper
2 tsp dried basil
3 cups frozen spinach
1 tbsp garlic powder
1/4 cup frozen chopped onions (I use mirepoix)
16 oz boneless skinless chicken breasts
2 oz 2% mozzarella cheese

Recipe Directions for Easy Italian Chicken

  1. Preheat over to 350 degrees F.

  2. Cut chicken into 4-4oz pieces.

  3. Cook in a pan over medium-high heat lightly sprayed with oil until completely white in the middle.

  4. Meanwhile, place frozen spinach, frozen onions, and garlic powder in a saucepan with 2-3 tbsp of water.

  5. Cook on high heat, stirring frequently until hot.

  6. Spread spinach on the bottom of a 8x12 or small glass dish.

  7. Place chicken on top.

  8. Mix tomatoes, chopped onions, cayenne, and basil together in a small bowl.

  9. Pour tomato mix on top of chicken.

  10. Evenly sprinkle cheese on top.

  11. Bake for about 10 mins, until cheese is melted and dish is fragrant.

  12. Serve with pasta if you wish.
