This is an extremely quick, easy and versatile weeknight supper dish. It is especially great for summer eating, when hot weather calls for lighter fare and summer vegetables become abundant. Substitute and/or add favorite summer veggies, such as spinach, summer squash, sugar snap peas, cucumbers, etc. for added flavor and vitamins. Make even healthier by using whole wheat pastas. Good hot or chilled.

Recipe Ingredients for Easy Italian Chicken and Pasta with Vegetables

10 oz. dried pasta
16 oz. chicken breast
1 1/2 cup diced tomatoes
1 cup diced zuchinni
1 cup Italian dressing

Recipe Directions for Easy Italian Chicken and Pasta with Vegetables

  1. Make pasta according to package instructions (I like to used penne or other short pastas).

  2. While pasta is cooking, saute cubed chicken breast in a touch of extra virgin olive oil.

  3. Drain pasta and add sauteed chicken, diced veggies and toss with Italian dressing. Add dressing bit by bit, just enough to coat - the full cup may not be necessary.

  4. Sprinkle with shredded parmesan if desired.
