Recipe Ingredients for Easy Greek Garbanzo Salad

15 oz garbanzo beans, drained and rinsed
2/3 cup minced scallion
3 cloves garlic, pressed
1 medium ripe tomato, seeds removed and chopped
3 stalks celery, 1/2" dice
3 tablespoons fresh lemon juice
2 1/2 tablespoons chopped fresh mint
3 tablespoons chopped fresh parsley
1 1/3 teaspoons extra virgin olive oil, to taste
1/4 cup feta cheese, optional
4 cups romaine lettuce, chopped
1 salt and pepper, to taste

Recipe Directions for Easy Greek Garbanzo Salad

  1. Mix all ingredients except romaine and feta cheese, chill.

  2. Serve over lettuce and sprinkle with cheese.

  3. Keeps well in refrigerator, flavors intensify as it marinates.
