Gluten Free, Highly Nutritious, & low carb

Recipe Ingredients for Easy Gluten Free Bread

5 eggs (if you use jumbo-sized eggs, only use 4)
1/3 cup extra virgin olive oil
1/2 cup water
2 cups flax seed meal
1 tbsp baking powder
1 tsp salt

Recipe Directions for Easy Gluten Free Bread

  1. Preheat oven to 350 degrees F. Line a 9 1/2" x 11* or other large baking pan with parchment paper or a silicone baking mat.

  2. In a mixing bowl, beat eggs, oil and water together until light and fluffy (1-2 minutes). Add the flax seed meal, baking powder and salt and stir just until well-combined. Let sit to thicken for 3 minutes.

  3. Scrape batter into the center of the prepared pan and let it spread out (it likely won't reach the edges).

  4. Bake for 18-20 minutes, until the top of the bread springs back when touched.

  5. Let cool before cutting into squares (or whatever shape you want.

  6. Serves 4-
