This is a butter-free cake, best flavor when made with rapeseed oil (Canola). Goes well with Hot Chocolate drink. One serving is a 3/8 inch slice.

Recipe Ingredients for Easy Fruit Cake

4 oz White flour
4 oz White sr flour
1/2 teaspoon ground Cinnamon
4 oz Brown Sugar
10 oz Mixed Dried Fruit
2 oz Glace Cherries
2 eggs
4 oz Vegetable oil
4 oz Soya milk
1/2 teaspoon Almond oil

Recipe Directions for Easy Fruit Cake

  1. Preheat oven to 300 degrees.

  2. Sift flours and cinnamon into large bowl.

  3. Add all other ingredients and mix well.

  4. Add to greased 8-inch loaf pan.

  5. Bake for 90 minutes until tester in the middle of the cake is clean.

  6. Let cool before cutting.
