This could probably be more servings. We were just starving! This turned out very similar to what you get at B.D.'s Mongolian Grill or those awesome Japanese hibachi grills. Yum!

Recipe Ingredients for Easy easy fried rice

2 cups brown rice
1 1/2 cup zucchini, chopped
1 cup onion, chopped
1/2 cup yellow squash
2 tbsp sesame oil
1 tbsp olive oil
2 eggs, whole
2 tsp soy sauce
1 1/2 cup chicken breast, diced
3 tbsp mustard
1 tbsp dijon mustard
1 tsp mayonnaise
1 tbsp honey

Recipe Directions for Easy easy fried rice

  1. Cook the rice and put it in a bowl to come to room temperature. Stir it a few times to help it along. You can also use leftover rice.

  2. Cook the meat however you like it, adding salt, pepper, and whatever spices you like. Dice it before or after you cook--it'll cook much faster if you do it before or during.

  3. Note: Use free range, natural chicken if you can. As terrible as it sounds, happier chickens taste better. The chicken is also completely optional. In fact, it might taste better without it.

  4. Chop the veggies and toss them in a good size pan with a bit of oil (either) on high heat. Stir these a LOT until they're ready. Use a bit of kosher salt to help them cook down (optional).

  5. Put the veggies on a plate to rest for a minute, and toss the rice in with either a bit of oil or oil spray.

  6. Stir the rice for a minute in the oil to get it hot. Stir in two beaten eggs until you don't see any runny bits.

  7. Dump the cooked veggies back in, along with some green onions (scallions) if you like them. Keep stirring until the scallions are wilted.

  8. Stir mustards, mayo, and honey together into a sauce for the chicken or to stir into the rice. It adds some zingy flavor, if you like that.

  9. Add the chicken or serve alongside.
