Just a simple recipe my family uses for Eggplant Parmesan. Single serving measurements are estimates.

Recipe Ingredients for Easy Eggplant Parmesan

2 slices Eggplant
1/8 cup bread crumbs
3 tbsp tomato sauce
2 tbsp ricotta cheese
1/8 cup shredded mozzarella

Recipe Directions for Easy Eggplant Parmesan

  1. Slice eggplant into 1/4 inch thick slices.

  2. Coat with bread crumbs (I usually shake them in a ziplock baggie to get good coverage).

  3. Pan fry the eggplant until brown and crispy. You can do this with or without oil. A touch of cooking spray on the pan would be enough.

  4. Spread 1 tbsp tomato sauce in the bottom of a small oven-safe dish. Place eggplant on top, cover eggplant with the remaining tomato sauce.

  5. Spoon ricotta cheese over the eggplant and sprinkle mozzarella over the top.

  6. Bake at 350 for about 10 minutes or until the mozzarella melts.
