A lentil side dish. Easy to make (with time to soak and cook) and very tasty.

Recipe Ingredients for Easy Curried Lentils

1 cup lentils
3 cups water
2 large onions, chopped
1 Salt
2 tablespoons olive oil
1 clove garlic, minced
1 1/2 teaspoon curry powder

Recipe Directions for Easy Curried Lentils

  1. Wash lentils

  2. Add water and soak several hours or overnight.

  3. Add salt and one of the chopped onions; bring to a boil; simmer until lentils are tender, about an hour or longer.

  4. Saute remaining onion and garlic in butter until they begin to brown; add to lentils.

  5. Add curry powder; cook 10 minutes. (Lentils should be very soft.)
