A straight forward recipe for cupcakes. Makes 20 SMALL cupcakes.

Recipe Ingredients for Easy Cupcakes

125 g (softened) butter
125 g caster sugar
125 g self raising flour
2 eggs (lightly beaten)
2 tbsp whole milk
1 tbsp vanilla extract

Recipe Directions for Easy Cupcakes

  1. Pre-heat oven to 190C (170C for fan ovens)

  2. Beat butter and sugar until light and fluffy.

  3. Add eggs, a little at a time and whisk. Add vanilla extract and mix.

  4. Sift half of the flour, fold it into mixture.

  5. Add the milk.

  6. Add the remaining flour, folding it again.

  7. Bake for 12min, until golden in colour.
