This easy steel cut oatmeal is so creamy and delicious. It's almost like a breakfast custard! You can bump up the sugar, vanilla, and cinnamon to your own personal taste. The recipe as outlined is on the less sweet side and serves four to six people.

Recipe Ingredients for Easy, Creamy, Overnight Steel Cut Oatmeal

1 cup (dry) 100% Natural Steel Cut Oats (dry)
3 cup (8 fl oz) Water
2 1tsp Olive Oil
1 serving 1% Partly Skimmed Milk
250 mL Liberte greek yogourt
9 tsp unpacked Sugars, Brown
1 tsp Vanilla Extract
1 serving vanilla bean, one whole
0.25 tsp Cinnamon, Ground
4 medium Egg, Whole
1/4 tsp Sea Salt

Recipe Directions for Easy, Creamy, Overnight Steel Cut Oatmeal

  1. Before bed, heat a large pot and toast the steel cut oats in the olive oil for about three minutes. The oats will turn a golden brown and give off a nice, nutty aroma. Watch the oats - they can burn easily. (Start again if you burn the oats!) Add the water carefully to avoid burning yourself on the steam. Split the vanilla bean, place it in the pot, and bring to a rolling boil. Turn off the heat, cover, and go to bed.

  2. The next morning, fish out the vanilla bean, scrape the seeds into the oatmeal, and discard the husk. Add the milk, yogurt, salt, sugar, cinnamon, and optional vanilla extract. Stirring frequently, bring to a boil and then cook for about four minutes longer. Meanwhile, beat the eggs in a separate bowl. Remove the oatmeal from the heat and quickly beat in the eggs. (If you don?t do this quickly, you will have scrambled eggs, which is definitely not the texture that we are looking for.) Serve and enjoy!
