I say cream of anything, because you can substitute the coleslaw mix for your favorite shredded vegetable (broccoli, carrot, squash, cauliflower etc.)

Recipe Ingredients for Easy Cream of Anything soup

1 cup almond milk
1 tbsp dijon mustard
1 tsp oregano
1 salt and pepper
400 g (3 cups) coleslaw mix
1/2 bouillon cube
2 cups water

Recipe Directions for Easy Cream of Anything soup

  1. Place all ingredients in a heavy bottomed saucepan, and bring to a boil.

  2. Once vegetables are softened, transfer soup to blender and blend until vegetables are pureed.

  3. Return pureed soup to the heavy bottomed saucepan and bring to a boil once more.

  4. Serve
