This is a quick & tasty recipe, perfect for something different while you watch your calories. Makes 8 medium crab enchiladas. For dinner I prefer to serve it with a side salad.

Recipe Ingredients for Easy Crab Enchiladas

3/4 lb imitation crabmeat (chunked)
14 oz tomatoes w green chilies (Hy-vee)
1/2 tsp garlic powder
400 g 96% fat free whole wheat tortillas (Mission)
1 c salsa (I prefer hot)
3/4 c reduced fat cheddar cheese, shredded
1/2 c nonfat mozzarella cheese, shredded

Recipe Directions for Easy Crab Enchiladas

Mix first 3 ingredients into pan & bring to simmer for 10 minutes. Preheat oven to 350 degrees. Portion meat mixture into tortilla, add shredded cheddar cheese & roll up. Place into a sprayed pan, top with salsa & shredded mozzarella cheese. Bake for 17-20 min. at 350 degrees.
