Recipe Ingredients for Easy Corn Chowder

2 medium red potatoes
1 cup diced ham
1 cup diced celery
1 tsp butter
2 tbsp flour
14 oz reduced-sodium chicken broth
12 oz fat-free evaporated milk
14 3/4 oz creamed corn
2 tbsp sliced chives

Recipe Directions for Easy Corn Chowder

  1. Cut potatoes and ham into 1/2 cubes; set aside. Dice celery.

  2. Heat butter over medium heat. Add celery; cook and stir 3-4 minutes or until crisp-tender. Stir in flour; heat until bubbly.

  3. Gradually add broth, evaporated milk, and corn. Whisk until blended.

  4. Add potatoes; bring to a boil. Reduce heat; cook, uncovered, 10 minutes or until potatoes are tender. Stir in ham; heat through.

  5. Remove from heat; stir chives into soup, and season with salt and pepper if desired. Ladle soup into bowls.
