Hearty, healthy low-cal curry dinner. Add/substitute onions, chicken, peas, whatever is in the fridge!

Recipe Ingredients for Easy Coconut Curry Potatoes, Chickpeas, & Veggies over Rice

3 potatoes
2 cups chick peas
1 red bell pepper
1 cup carrot
2 tbsp vegetable oil
1/4 cup rice vinegar
2 tbsp brown sugar
2 tsp red curry paste
2 tbsp lime juice
1/4 tsp crushed red pepper
1/2 tsp salt
1/2 cup light coconut milk
1 cup basmati rice
4 tbsp chives
4 cloves garlic

Recipe Directions for Easy Coconut Curry Potatoes, Chickpeas, & Veggies over Rice

  1. Skin and cut potatoes into 1-inch chunks.

  2. Saute potatoes in oil until almost fully cooked (about 10-15 minutes).

  3. Mix rice vinegar, brown sugar, curry paste, lime juice, and red pepper in a separate dish.

  4. Start rice cooking in another pot.

  5. Add garlic, chick peas, carrots, any other veggies you like to potatoes.

  6. Saute.

  7. Add rice vinegar & brown sugar mixture and salt to pan.

  8. Mix in coconut milk about 1-2 minutes before removing from heat.

  9. Serve over basmati rice and garnish with chives.
