Simple chicken, egg, and vegetable stir fry. Use whatever vegetables you have lying around, and whatever cooked meat. The chicken I used was poached in water from the night before.

Recipe Ingredients for Easy Chicken and Vegetable Stir Fry

1/2 tbsp vegetable oil
1/2 tsp ginger, minced
1/2 tsp garlic, minced
1 pinch of salt
1 Lime (5 g) Juice (wedge+yields)
1 carrot, chopped
2 eggs, beaten
1 stalk of celery, chopped
1/4 bell pepper, chopped
1/2 cup poached chicken, chopped
3 tbsp soy sauce
1 tsp cilantro

Recipe Directions for Easy Chicken and Vegetable Stir Fry

  1. Prepare the ingredients: Chop the vegetables and chicken and beat the eggs.

  2. Heat the oil in the pan until a drop of water sizzles. Add the garlic, salt, and ginger and stir fry for about 30 seconds, or until you can smell the ginger and garlic.

  3. Add the carrot and stir fry for about 20 seconds, then place a lid on the pan and steam for another 10-15 seconds.

  4. Add the chicken.

  5. Add the celery and bell pepper. Stir fry for another 20 seconds, then add 1 or 2 tbsp of soy sauce. Place the lid on the pan and steam for another 10-15 seconds.

  6. Add the egg. Stir fry until the egg is cooked and has browned a little. Add a little more soy sauce and the squeeze of lime.

  7. Add the cilantro and serve!
