A quick and healthy veggie and chicken stir-fry

Recipe Ingredients for Easy Chicken Stri-fry

1 pound boneless skinless chicken breasts
2 tablespoons soy sauce
2 cups broccoli
1 cup carrots, chopped
1/4 cup water chestnuts
1/2 cup sugar snap peas
1/2 cup red onion
1 cup red bell pepper, sliced
1 cup green bell pepper, sliced

Recipe Directions for Easy Chicken Stri-fry

  1. Cut chicken into 1 inch chunks and place into a bowl. Add 2 tablespoons of soy sauce and let marinade for at least an hour.

  2. Chop veggies into bite size pieces and set aside while the chicken marinades.

  3. Spray non-stick cooking spray into a wok or a large frying pan. Add veggies one by one, allowing them to soften slightly. Once all the veggies are cooked, remove them from the pan. Add chicken and sautee until cooked through. Add veggies back in and toss with chicken.

  4. Serve with rice or just enjoy on its own!
