Makes 3 servings



All in one chicken, rice, and vegetable dish. Can substitute other veggies, add a splash of tabasco sauce, or top with shredded cheese if desired. Very easy dish to make on busy days.

Recipe Ingredients for Easy Chicken and Rice Casserole

2 cans Cream of Mushroom Soup (about 2 cans)
1 cup water
1 cup uncooked brown rice
5 large mushrooms, sliced
1/2 tsp garlic powder
1 tsp ground black pepper
21 grams dry onion soup mix (1 envelope)
16 oz boneless skinless chicken breasts (about 3)
10 oz frozen broccoli florets

Recipe Directions for Easy Chicken and Rice Casserole

  1. Preheat oven to 350d

  2. In large bowl, combine soup, water, rice, mushrooms, broccoli, garlic powder, and ground pepper.

  3. Pour mixture into a greased 11x7 baking dish

  4. Place chicken breasts on top of mixture.

  5. Sprinkle dry onion soup mix over the top of dish.

  6. Cover tightly with aluminum foil and bake for 60-75 minutes or until chicken is cooked through.
