1 big soup bowl equals 1 hearty serving! This soup is delicious, filling, and best of all --- very easy to make. This recipe is also versatile...substitute your favorite fresh or frozen veggies, your favorite spices or flavorings, or easily leave out the chicken and convert into a vegetarian recipe with veggie stock! This recipe was calculated with the regular fat/sodium chicken broth available on calorie count. I recommended using as close to fat free and low sodium as possible, for a healthier soup!

Recipe Ingredients for Easy Chicken Noodle Soup w/ Veggies

6 cups chicken broth
1 cup water
5 1/4 oz whole wheat penne
10 oz frozen mixed vegetables
6 chicken tenders
2 tbsp olive oil
1 tbsp black pepper
1 tsp thyme

Recipe Directions for Easy Chicken Noodle Soup w/ Veggies

  1. Soften vegetables and thaw chicken (if frozen) in the microwave.

  2. Chop any larger veggies down to size, and cut chicken into chunks. For even cooking, try to make sure all chopped bits are about the same size. (2 large boneless, skinless breasts can be substituted for chicken tenders.)

  3. Add olive oil to a large soup/stock pot and heat to medium temperature. When oil is hot, add vegetables and chicken and saute until vegetables are nearly done and chicken is mostly white.

  4. Add pepper and thyme, combine, and cook for 30 seconds more.

  5. Add chicken broth and noodles. Cook on medium-high heat, stirring occasionally, for 8-10 minutes or until pasta is tender.

  6. Serve with crackers, grilled whole wheat pita, or grilled cheese!
