An easy one-pot meal that goes well with thick wholegrain toast.

Recipe Ingredients for Easy Chicken Noodle Soup

2 tablespoons olive oil
180 grams carrot, peeled and thinly sliced
140 grams potato, peeled and diced
100 gram celery, thinly sliced
80 grams onion, peeled and chopped
400 grams chicken breast meat, diced
1 1/2 litres chicken stock
50 grams dry angel hair pasta, cut into 5 cms
2 tablespoons parsley leaves, chopped

Recipe Directions for Easy Chicken Noodle Soup

  1. Heat oil in a saucepan over medium heat until hot. Add onion and cook, stirring often, for 3 minutes. Add carrot, celery and potato and cook, stirring often, for 5 minutes.

  2. Add stock, cover and bring to the boil. Reduce heat, cover and simmer for 15 minutes. Add chicken, partially cover and cook for 8 to 10 minutes.

  3. Add pasta and simmer until pasta is tender.

  4. Stir through parsley. Season to taste. Ladle soup into serving bowls and serve with wholegrain toast.
