Easy Chicken Enchiladas Recipe

Easy Enchiladas that you can freeze! I cook then freeze them into individual meals!

Recipe Ingredients for Easy Chicken Enchiladas

4 oz Sour Cream
2 tortillas Old El Paso Flour Tortillas for Soft Tacos
10.69 oz Chicken
2 tbsp Onion Powder
1.33 cup Cheese
10 oz Cream of Chicken Condensed Soup

Recipe Directions for Easy Chicken Enchiladas

  1. If chicken is not already precooked, bake chicken with season salt or soul seasoning, then pull or chop when cooled. (I cook chicken in bulk, pull or chop it, and freeze in 4 cup portions to make meal preparation easy peasy)

  2. Shred 2 cups of cheese

  3. Chop onion, then saute in butter (with garlic clove if applicable)

  4. Mix sour cream, soup, milk, onion and garlic into large bowl.

  5. Then add 1 and a half cups of cheese and the chicken to mixture

  6. Marinate to your preference.

  7. After marinating, place a heaping tablespoon of mixture off center on each tortilla and roll.

  8. Lay into 9x13 baking dish. I recommend glass if you will be freezing before cooking.

  9. Spread remaining mixture on top.

  10. Bake for 20 mins at 350 degrees.

  11. Top with remaining half cup of cheese and bake for 5 mins longer.

  12. Cool 5-10 mins before serving :-)

  13. I freeze about half the enchiladas after baking/cooling in a ziplock bag for another meal. I defrost and recook in the microwave. If you prefer, you can also prepare an entire dish and leave uncooked in your casserole dish in the freezer. Be sure to move the dish to the fridge for defrosting 24 hours in advance, then bake as per original directions.
