Recipe Ingredients for Easy Chicken Curry in a Hurry

1 lb raw chicken breast
1 cup low sodium chicken broth
1 1/4 cups 98% fat free cream of chicken soup
3 cups cauliflower
1/2 cup onion
3 tbsp curry powder
1 tbsp garlic, minced
1 red bell pepper
270 g basmati rice
1 tbsp olive oil

Recipe Directions for Easy Chicken Curry in a Hurry

  1. Heat large skillet with 1 tbsp EVOO over Med.-High Heat.

  2. Add onion, diced Chicken to heated EVOO. Brown.

  3. Combine Curry Powder and Cream of Chicken Soup in a small bowl, whisk.

  4. Cook 1 cup uncooked Basmati according to package.

  5. Add Red Bell Pepper to Chicken and onion. Stir.

  6. Add Chicken Broth to Chicken mixture, cover and simmer 5 minutes.

  7. Add Cauliflower.

  8. Add Cream of Chicken Mixture.

  9. Cover and simmer 10 minutes.

  10. Serve over Basmati Rice with Naan.
