Light and easy recipe, that simmers in a few hours. Delicious over whole grain rice or whole wheat pasta.

Recipe Ingredients for Easy Chicken Cacciatore

1 lb chicken breast, skin removed and cubed
1 green pepper, chinked
1/2 medium yellow onion, chopped
2 garlic cloves
20 oz tomatoes, diced in a can
1/2 cup water
1 dash salt
1 dash fresh ground black pepper
1 dash oregano
1 dash basil

Recipe Directions for Easy Chicken Cacciatore

  1. Saute green pepper and onion on medium heat. Sweat them until the onion turns opaque and add garlic. Let that saute together untilyou start to smell the garlic.

  2. Add Chicken on top of veggies, do not stir. Add tomatoes, water, and seasonings on top of the chicken, again do not stir. Turn heat to high and cover. When it comes to a boil, leave cover on and let simmer for about 2 hours, stirring after 1 hour and intermittenely until done.
