Recipe Ingredients for Easy Cheesy Manicotti

8 large eggs
2 tbsp heavy cream
1 tsp salt
1/2 tsp black pepper
4 tsp olive oil, divided
15 oz ricotta cheese
4 med eggs, seperated
1 1/2 cup shredded mozzarella cheese, divided
1 cup grated provolone cheese, divided
1/2 cup chopped fresh parsley
1 2/3 cups pasta sauce, bottled, low-carb

Recipe Directions for Easy Cheesy Manicotti

  1. Whisk 8 eggs, cream, salt and pepper in Lg bowl. Heat 1/2 tsp olive oil in Lg nonstick skillet over med. heat. Ladle just enough egg mix into skillet to thinly coat bottom. Heat until crepe is cooked through. Gently loosen edges with a wide spatula and slide crepe onto Lg plate. Recoat pan with 1/2 tsp olive oil and repeat with remaining egg mix to make 8 crepes.

  2. Preheat oven 350 F. Pour 2 tbsp pasta sauce in the bottom of 4 individual baking dishes.

  3. Combine ricotta, egg yolks, 1 cup mozzerella, 1/2 cup provolone, pamesan, and parsley in Lg bowl. Beat egg whites in seperate Lg bowl using a mixer on med until stiff peaks form; fold into cheese mixture. Spoon about 1/4 cup cheese filling down the middle of each crepe.

  4. Roll up crepes; place seam side down in baking dish, two per baking dish. Pour remaining sauce evenly over tops. Sprinkle with remaining cheeses. Bake until cheese is golden, about 40 mins.
