Recipe Ingredients for easy chana masala

2 onions, diced
3 cloves garlic, minced
2 tablespoons olive oil
1 eggplant, cut into 1/2 inch pieces
3 cups canned tomatoes
2 cans beans, rinsed
1 1/2 tablespoons curry paste
1 salt to taste

Recipe Directions for easy chana masala

  1. heat olive oil in a large pot. saute onions and garlic with curry paste until onions are just translucent.

  2. add eggplant and saute another 5 minutes.

  3. add beans (i use garbanzos) and canned tomato. simmer for another half hour or so, adding salt and more curry paste to taste.
