Easier, lower salt/fat version of dad's soup. 1 serving should be ~2c.

Recipe Ingredients for Easy Butternut Squash Soup

4 lbs butternut squash
1 onion
4 c (no salt no fat broth)
1 c Nonfat Plain Greek Yogurt
1 t cumin or nutmeg (and/or tumeric)
1 Pepper to taste

Recipe Directions for Easy Butternut Squash Soup

  1. Place squash, onion, spices in pot, cover with broth, bring to boil then simmer ~1hr.

  2. Puree, then add yogurt. Serve hot.
