Recipe Ingredients for Easy Butternut Squash Soup - Crockpot Ready

2 cups butternut squash
2 small red potatoes
1/3 cup chopped onion
2 cloves garlic
2 cups low sodium vegetable broth
1/8 teaspoon nutmeg
1/8 teaspoon ginger
1/4 teaspoon curry
1/8 teaspoon thyme

Recipe Directions for Easy Butternut Squash Soup - Crockpot Ready

  1. Roast butternut squash and red potatoes in oven until soft. While waiting for squash to cook, chop the onions and garlic. The cube potatoes and squash.

  2. Add 1 cup vegetable broth to Crockpot, then add cubed squash and potatoes. Using Hand blender, puree until smooth. Then add onion, garlic and spices.

  3. Add additional cup of vegetable broth.

  4. Heat on high in crockpot until mixture bubbles. Then simmer on low for 2 - 3 hours. Add water or more broth for thinner soup.
