Recipe Ingredients for Easy Borscht

16 oz diced beets
14 1/2 oz tomatoes, reduced-sodium, cut up
14 1/2 oz chicken broth, reduced-sodium
2 cups shredded cabbage, with carrot (coleslaw mix)
1 tsp Splenda
1 cube Beef Bouillon
1/2 cup sour cream, light dairy
1/4 cup sliced green onion

Recipe Directions for Easy Borscht

  1. In a large saucepan combine undrained beets, undrained tomatoes, broth, coleslaw mix, sugar, and beef bouillon. Bring to boiling; reduce heat. Cover and simmer for 10 to 15 minutes or till vegetables are very tender. (For a smoother soup, mash or puree half the mixture.)

  2. Serve in soup bowls. Dollop with sour cream and sprinkle with green onion.
