Recipe Ingredients for Easy Blackbean Chili

1 cup onion
1/2 cup carrot
1 cup parsnip
2 cloves garlic
1 teaspoon olive oil
1 1/2 cup black beans
1/2 cup bulgur
2 oz. red wine
6 oz. tomato paste
1/2 cup vegetable broth
1/4 cup corn
2 teaspoons chili powder
1/2 teaspoon cumin
1/2 teaspoon coriander
1/8 teaspoon cayenne

Recipe Directions for Easy Blackbean Chili

  1. Soak the bulgur in the heated veggie broth.

  2. Meanwhile heat the olive oil.

  3. Saute the chopped onion, parsnip and carrot.

  4. Add the finely chopped garlic.

  5. Stir in the red wine and let cook a few minutes.

  6. Add corn and then the tomato paste.

  7. Add some water, about 1/2 cup, along with the spices.

  8. Stir in the drained and rinsed black beans (from a can of no salt added beans).

  9. Heat through and pop the oven proof casserole, covered into a 325 degree oven.

  10. Bake for about 20 minutes.

  11. Divide into 4 portions.
