Easy low-fat black-eyed peas- ideal for a crcok pot I usually keep it simple as a quick hearty healthy meal everyone can enjoy. This dish also goes well with a side garden salad.

Recipe Ingredients for Easy Black-eyed Peas

16 oz Peas Black-Eyed
4 cup Light Reduced Sodium Chicken Broth
12 oz Smoked Turkey Wings

Recipe Directions for Easy Black-eyed Peas

  1. First soak black-eyed peas overnight, drain excess water and rinse.

  2. Remove skin from smoked turkey (breast, leg, or wing, whichever you prefer). Cut up remaining meat and place in crock pot with chicken reduced sodium, fat-free broth.

  3. Simmer on low for about 2 to 3 hours until meat is tender and broth is flavorful.

  4. Add black-eyed peas and simmer on low for an additional 3-4 hours depending on your taste.

  5. Add salt and pepper to taste.

  6. This recipe can be modified to add onions, bell peppers or whatever you desire.
