This is a quick and easy soup to make. The combination of ingredients makes it a tasty alternative to canned soups.

Recipe Ingredients for Easy Black Bean Soup

1/2 c. onion - chopped
1 tsp. garlic - minced
2 stalks celery - chopped
1/2 c. carrots - chopped
1 tsp. oregano
1 tsp. parsley
1/2 tsp. cumin
1/2 tsp. chili powder
1 c. water
3 c. vegetable broth
1 c. corn
1 c. black beans

Recipe Directions for Easy Black Bean Soup

  1. Slightly saute' onion, garlic, celery and carrots.

  2. Add water, oregano, parsley, cumin and chili powder and let boil for about 5 minutes.

  3. Add vegetable broth, corn and black beans.

  4. Allow to boil for 5 minutes more, then turn the heat back to simmer and allow the ingredients to come together.

  5. This is a fairly thin soup, so the cup of water may be eliminated for a thicker consistency.

  6. As an option, I served the soup over 1/2 cup of cooked brown rice.
