A twist on meatloaf to bring down the calories, but keep the taste.

Recipe Ingredients for Easy Beef & Vegetable Loaf

1 cup onion, chopped
1 cup carrot, shredded
1 cup zucchini, shredded
1 cup mushrooms, chopped
1 clove garlic, minced
1 ounce white bread, torn into pieces
2 tbsp 2% milk
10 ounces lean ground beef
1 egg
1 tbsp fresh parsley, minced
1 tsp salt
1/2 tsp dried thyme
1/2 tsp ground sage

Recipe Directions for Easy Beef & Vegetable Loaf

  1. Preheat oven to 350? F. Spray 1 quart baking dish with nonstick cooking spray.

  2. Spray medium skillet with nonstick cooking spray; heat. Add onions, and mushroom, over medium-high heat, for about 7 minutes, until golden brown. Add carrot, zucchini, and garlic; cook about three minutes until vegetables are softened. Set aside to cool.

  3. In a small bowl, combine bread and milk; let stand 10 minutes.

  4. In a small bowl combine beef, egg, parsley, salt, pepper, thyme and sage, cooled vegetables and soaked bread. Shape beef into oval loaf; place into prepared pan. Bake 1 hour and 15 minutes, until cooked through. Remove from oven; let stand 5 minutes.

  5. Cut into 16 equal slices. One serving equals 4 slices. Makes 4 servings.
