This is easy High Protein meal I came up with that that I eat for lunch all week! You can substitue the cocnut milk if you like but it has been proven that coconut milk is actually good for you despite the high fat because it is good saturated fat. who would of knew there was such a thing.

Recipe Ingredients for Easy Beef and Lentil Curry

2 tsp olive oil
30 oz. beef
1/2 cup curry powder
1 1/2 onion chopped
2 cloves garlic
1 cup lentils
1 1/2 cup beef stock
400 ml coconut milk

Recipe Directions for Easy Beef and Lentil Curry

  1. Heat half the oil in a saucepan over medium heat. Add the beef and half the curry paste, and cook until the beef is browned. Transfer the beef to a plate.

  2. Heat the remaining oil over medium-low heat. Add the onion, garlic, ginger and remaining curry paste, and cook until the onion softens. Add the lentils, stock and coconut milk. Bring to the boil and then simmer for 10 minutes. Return the beef to the pan and simmer for a further 8 minutes.

  3. Serve with brown rice.
