Beef Enchiladas with Emeril's Sauce

Recipe Ingredients for Easy Beef Enchiladas

3 tablespoons vegetable oil
1 tablespoon flour
1/4 cup chili powder
2 cups chicken stock
10 ounces tomato paste
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon salt
1 lb ground beef
1/4 cup chopped onion
1 teaspoon garlic powder (I prefer fresh minced)
1 tablespoon worcestershire sauce
8 ounce tomato sauce
1 teaspoon paprika
1 teaspoon oregano
2 teaspoons chili powder (more or less for your taste)
1/2 teaspoon cumin
1/2 teaspoon black pepper
3 cups shredded cheese (I like the jack or cheddar combos)
12 flour tortillas

Recipe Directions for Easy Beef Enchiladas

  1. To make sauce (from Emeril):In a medium saucepan heat oil, add flour, smoothing and stirring with a wooden spoon. Cook for 1 minute. Add chili powder and cook for 30 seconds. Add stock, tomato paste, oregano, and cumin. Stir to combine. Bring to a boil, reduce heat to low and cook for 15 minutes. The sauce will thicken and smooth out. Adjust the seasonings.

  2. Brown beef with onion and garlic, drain.

  3. Add next 7 ingredients (worcestershire sauce through black pepper).

  4. In 10x13 baking pan, pour just enough enchilada sauce in the bottom to coat the bottom of the pan.

  5. Fill each tortilla with a spoonful of meat mixture.

  6. Roll tortilla and place seam side down in pan. Continue with remaining tortillas.

  7. Pour remaining enchilada sauce over tortillas and top with cheese. At this time, pan may be refrigerated for several hours or overnight.

  9. Bake in 350 degree oven for 20 minutes (30 minutes if refrigerated).
