Banana bran muffins pack a lot of nutritional punch for very little money. They're high in fiber and potassium, low in fat; and pretty, darn tasty too. Prep Time: 10 minutes Cook Time: 20 minutes

Recipe Ingredients for Easy Banana Bran Muffins

1 cup bran flakes
1 cup all-purpose flour
1 large banana
1/2 cup honey
1/4 cup milk
2 tbsp. butter or margarine
2 tbsp. yogurt (plain or vanilla)
1 tsp. baking powder
1/2 tsp. salt

Recipe Directions for Easy Banana Bran Muffins

  1. Preheat oven to 375 degrees.

  2. Combine the bran flakes and milk in a bowl, and set aside.

  3. In a second bowl, combine all of the remaining ingredients.

  4. Add the bran flakes and milk to the mixture.

  5. Stir one to two minutes, or until well mixed.

  6. Spoon the batter into a greased muffin tin, filling each cup 2/3 full.

  7. Bake 20 minutes, or until tops are springy to the touch.
