Simple fish recipe, works well with any fish, it is a great way to incorporate oily fish into your diet

Recipe Ingredients for Easy Baked Fish with Vegetables

6 ounce fish fillets, any fish will work
1 medium onion, 1/2 onion large dice, 1/2 onion 1/4" slices
1 cup mushrooms, sliced
2 tbsp mustard, whole grain
1/4 tsp pepper, cracked

Recipe Directions for Easy Baked Fish with Vegetables

  1. Preheat oven to 325 degrees

  2. Lightly spray bottoms of 2 small oval baking dishes with cooking spray if desired, place 2 onion slices in the bottom of each dish.

  3. Set the fish on the onions, skin side down - if overly moist, pat dry with a paper towel.

  4. Spread each fillet with 1 tbsp mustard, add pepper if desired.

  5. Top each fillet with 1/2 sliced mushrooms and diced onion.

  6. Cover tightly with foil.

  7. Bake 20 minutes, remove fish and vegetables from dish (discard onion slides) and serve with a nice mixed green salad.

  8. If you do not have small oval baking dishes, this dish can b prepared by wrapping the ingredients in heavy foil packets and sealing tightly, bake on a cookie sheet to catch any liquid and be careful when opening.
