Easy baked chicken with breadcrumbs

Recipe Ingredients for Easy Baked Chicken

4 (160g) chicken breast
1 tbsp canola oil
1/2 cup bread crumbs
2 tsp dry herb (oregano, chives, tarragon, sage, thyme, parsley, rosemary ? whatever)
1/4 cup parmesan
1/4 c melted butter
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Easy Baked Chicken

  1. - Preheat the oven to 400 F.

  2. - Place a little canola or other vegetable oil (just enough to coat) in a shallow pan

  3. - Place chicken breasts in pan (skin side up if with bones)

  4. - Mix crumbs, herbs, cheese & butter and pat lightly on top of breasts

  5. - Drizzle extra butter over top

  6. - Cook uncovered for hour, basting once or twice if breasts get too brown

  7. - If pan gets too dry, add a bit of water or juice (any kind ? apple, orange,

  8. cranberry) and baste

  9. - After hour set oven to 325 F, cover lightly with foil if tops are brown and

  10. continue to cook another 15 minutes for boneless breasts, hour or so for bone-in

  11. - Chicken is done when internal temp in thickest part of meat reaches 185 F
