Quick and easy Italian! The original recipe called for Stove Top stuffing instead of bread crumbs, but that tastes really bizarre, so I recommend the bread crumbs. I also use lots of extra garlic!

Recipe Ingredients for Easy Baked Chicken Bruschetta

28 oz diced tomatoes
6 oz Italian bread crumbs
2 cloves garlic, minced
3 pounds boneless skinless chicken breast (three breasts, about a pound each, is best)
1 tsp. dried basil leaves
1 cup shredded mozzarella cheese

Recipe Directions for Easy Baked Chicken Bruschetta

  1. Preheat oven to 400F.

  2. Combine diced tomatoes, bread crumbs, garlic just until bread crumbs are moistened.

  3. Butterfly each chicken breast (cut them the "flat" way until you have six!). Place each on the center a large sheet of heavy-duty foil sprayed with cooking spray.

  4. Top chicken with basil, bread crumb mixture, and cheese.

  5. Bring up foil sides; double fold top and ends to seal each packet, leaving room for heat circulation inside. Place all six foil packets in 15x10x1-inch pan.

  6. Bake 30 to 35 minutes or until chicken is done (165F).

  7. Cool 5 minutes. Cut slits in foil to release steam before opening packets.

  8. Serve with pasta!
