Delicious and low calorie! good on pita bread, but I like it on a baked potato (SOOOOOO good)

Recipe Ingredients for Easy Baba Ghanoush

1 lb eggplant
3 tbsp olive oil
2 tbsp tahini
9 cloves garlic
3 tbsp lemon juice
1/2 cup cilantro
1 salt and pepper to taste

Recipe Directions for Easy Baba Ghanoush

  1. preheat oven to 400

  2. roast eggplant by cutting in half and coating with about 1 tbsp of olive oil

  3. roast garlic by cutting the top point part of a garlic head off, then drizzling\ about 1/2 tbsp olive oil onto the cut bulb and covering in tin foil Place both eggplant and garlic package on a baking sheet and bake for 30-35 minutes until both are soft and golden

  4. scoop out eggplant and let drain for a minute or so in a colander.

  5. Squeeze roasted garlic cloves out by applying pressure to the closed bottom end until the cloves push out.

  6. add eggplant and garlic to a food processor with the rest of the ingredients, blend until smooth

  7. season to taste.
